Growing up, we always had a special holiday breakfast. It really didn’t matter which holiday it was, though I do associate this particular meal with Christmas. This breakfast was also often made for a special occasion such as a birthday. It is something always sparks the memory of my family and allows me to have a small taste of my childhood. My husband cringes at the thought of the recipe I’m about to share, but it’s one that incorporates your typical “Sunday breakfast” foods and has a special history with my family.
It’s something my grandfather used to make my mother. He passed away when she was very young, but it’s something she held on to and enlisted my father to make for us. Bacon, soft boiled egg, toast and butter. Sounds simple and maybe even boring, right? Well… read on to discover the magic of Bacon, Egg and Toast in a Cup!
Bacon, Egg and Toast in a Cup
For one serving:
1 egg, soft boiled
Bacon, 2 slices (healthier option is turkey bacon)
Bread, 1 slice
Soft boil an egg and set aside. When cool, remove shell. Fry bacon, set aside. Toast bread and butter while warm with I Can’t Believe it’s Not Butter!
Now the fun part… Mush everything in a cup. My brother and I always loved using old coffee mugs since they were large and had a handle. Put the egg in a cup and take a fork to get it nice and smushed. Get the kids involved and have them rip up the toast and crumble bacon in small pieces. Put the toast and bacon in the cup. Use the fork to mix it up.
Now the real controversy is whether to eat with a fork or a spoon. I am a fork advocate (after all, you just used it to mush and mix) while my brother uses a spoon. Whichever you choose – enjoy!
